I love Pizza. Unfortunately pizza and low carb diets (or any type of diet really) do not go together.
I found this recipe and got very excited.
1 large egg
1 tablespoon almond flour
1 tablespoon parmesan cheese
1 teaspoon olive oil
garlic powder to taste
onion powder to taste
Pizza toppings of your choice (we used turkey pepperoni, mushrooms and mozzerella cheese)
Mix in a bowl. Heat a nonstick skillet. Pour in batter like a pancake and cook exactly like you would a pancake. Make sure it is golden brown on each side. Move to a baking sheet and top with toppings. Place under preheated broiler until toppings are warm and cheese is melted.
You will have to do this for each personal pizza. These are about 7-8 inches around.
I really liked these. But you have to go into it with an open mind. It does not have the texture or consistancy of a pizza crust. It is not crusty and hard. It is very much like a savory pancake topped with pizza toppings. We all really enjoyed it though and intend on making them again. They are really high in protein and have essentially no carbs.
We served ours with a bowl of steamed edamame and some fresh fruit in the middle of the table for us all pick at.
